The custom fields tab displays all of the custom fields that are Global and Local Properties for a given item (Item custom fields). Since some custom fields may not apply to your data, you can use the Customize View option in the right-click menu to hide fields you do not wish to see in this spreadsheet.

Custom fields for any item properties dependent on the BOM (BOM Item custom fields) are not displayed here. These fields are found in the 'Properties' or 'Mass View/Edit Item' selections in the right-click menu of the BOM tab.
